Mantova Nonpareil capers are the smallest capers (finissimi) more delicate in texture and flavor than larger capers, and most often used in recipes for a pop of flavor. Unripen flower buds of the Mediterranean caper bush, our capers are specially selected and packed in brine. Delicious when used in salads, pasta, or meat and seafood dishes. Typical of Mediterranean coasts, these tiny, delicate capers are picked when the fruit is still in blossom and has not yet matured. After being cleaned, sifted and calibrated by hand, they are soaked in wine vinegar, which softens their flavor without impairing it.
