Freezer-friendly Meal Prep Breakfast Sandwiches

These freezer-friendly breakfast sandwiches take very little time to make and assemble before stashing them in the freezer. Not only do they taste great, but they’ll save you money and time since you won’t have to wait in long drive-thru lines. It’s breakfast on the go, solved: Thanks, past self.
Set Up a Breakfast Station
First things first: Gather your equipment and ingredients. You’ll need a preheated oven, a rimmed sheet pan and space to spread out your ingredients. Get your eggs, cheese, muffins and any additional fillings you may want to add ready.
Since this recipe can be tailored to your tastes, now’s a great time to look for anything left over in your fridge. Proteins, cooked vegetables and soft greens can all be added to the raw egg mixture before it goes in the oven. While this recipe calls for pepper jack cheese, feel free to use any cheese you have on hand. Like things on the spicy side? A few red pepper flakes will liven things up. Any fresh herbs in your freezer or fridge? Toss those in, too.
Bake the Eggs
While the oven is preheating, whisk together eggs, milk, salt and pepper. Once the eggs are beaten, pour onto a rimmed sheet and put them in the preheated oven.
This “never fail” method for cooking eggs is a real game-changer. It creates a perfect, pillowy base for your frozen breakfast sandwiches. Not only is this method easy, but the delicate eggs develop a creamy, almost custardy texture that’s just perfect for an ultra-satisfying breakfast.
Assemble the Sandwiches
Once the egg mixture is cooled, cut it into 6 sections and place 1 on each of the English muffin halves. Add your protein, cheese or condiments to the sandwich.
Pro tip: You can use a jar lid or cookie cutter to cut out perfect circles that fit exactly onto the English muffins.
Wrap and Freeze
Once the breakfast sandwiches are cool, wrap them individually in foil and store them in a zip-top resealable bag. To warm them in the oven, thaw the sandwich overnight in the refrigerator first, then bake right in the foil for 10-15 minutes in the morning. If you prefer the microwave, thaw overnight and microwave the sandwich for just a couple of minutes to reheat. For an air fryer, separate the frozen sandwiches in half and flip the filling so the cheese is against the muffin. Put the halves into the air fryer basket (bread side down with the meat and egg facing up) and air fry at 340°F for 6-8 minutes. Reassemble the sandwiches and continue to air fry at the same temperature for another 2 minutes until heated through.
