  • 8 oz. mushrooms, trimmed
  • 1 lb. lean beef
  • 1 tsp. salt
  • ½ tsp. onion powder

  • 6 whole grain burger buns, toasted

Directions:

  1. Preheat grill to medium-high heat.
  2. In food processor, pulse mushrooms until finely chopped.
  3. In bowl, combine chopped mushrooms, beef and seasonings. Mix to combine. Form into 6 patties.
  4. Oil grill grates. Grill patties 8 to 10 minutes, flipping once, until internal temperature reaches 165°F. If using cheese, add it during the last 1 to 2 minutes of grilling.

Ingredients:

  • 1 lb. ground beef
  • 1 small white onion, diced
  • ⅔ cup water
  • 1 package (1.25 oz.) taco seasoning
  • 1 package (8.8 oz.) microwavable Spanish-style rice
  • 2 cups Mexican-style cheese, divided
  • Black olives, optional
  • Avocado slices, optional
  • Corn chips, optional
  • Sour cream, optional
  • Chopped cilantro, optional
  • Lime wedges, optional

Directions:

  1. Preheat oven to 400°F. Line plate with paper towels.
  2. In cast-iron skillet over medium heat, brown ground beef 8 minutes (safe internal temperature 160°F). Transfer to paper towel-lined plate, allowing excess grease to drain.
  3. Add onion to skillet; cook 2 minutes. Return beef to skillet; add water, taco seasoning, rice and 1 cup cheese. Stir to combine. Sprinkle remaining 1 cup cheese over top.
  4. Bake 12 to 15 minutes, or until cheese is bubbling and starting to brown.

  • 1 packet (1.25 oz.) Kroger Brand Original Taco Seasoning
  • ½ cup water
  • 7 burrito-sized flour tortillas
  • ¾ cup Kroger Brand Medium Salsa Con Queso Cheese Dip
  • 6 tostada shells
  • 6 Tbsp. sour cream
  • 1½ cups shredded lettuce
  • 2 Roma tomatoes, seeds removed and diced
  • 1½ cups shredded Mexican cheese blend
  • Canola oil

Directions:

  1. In large skillet over medium-high heat, cook ground beef, breaking into pieces, until no pink remains. Add taco seasoning and water. Continue cooking 2 to 3 minutes, until sauce thickens.
  2. Cut 1 flour tortilla into 6 wedges; set aside.
  3. In center of remaining 6 tortillas, evenly layer meat mixture, about 2 tablespoons queso, a tostada shell, about 1 tablespoon sour cream, lettuce, tomatoes and shredded cheese.
  4. In center of each stack, arrange 1 tortilla wedge. Fold edges of flour tortilla over ingredients, meeting edges in the center as tightly as possible.
  5. In skillet over medium-high heat, heat a small amount of canola oil. Place wraps, one or two at a time, seam side down; toast 1 to 3 minutes or until golden brown. Flip; continue cooking 1 to 3 minutes, until golden brown. Repeat with remaining wraps.

  • 2 medium carrots, peeled and diced
  • 1 stalk celery, diced

  • 1½ cups beef broth
  • 1 cup frozen peas
  • ½ tsp. salt
  • ¼ tsp. ground black pepper
  • 2 cups mashed potatoes

Directions:
