Lemon Bars

Ingredients

1 cup whole wheat flour
1 ¼ cup all-purpose flour
½ cup powdered sugar
1 cup margarine, softened
4 eggs, beaten
2 cups sugar
1/3 cup lemon juice
¼ cup all-purpose flour
1/2 tsp baking powder

Preparation

Crust: Stir flours and sugar together in a mixing bowl. Mix in margarine until thoroughly blended. Press the flour mixture on the bottom of an oiled baking pan. Bake in oven for 25 - 30 minutes until the crust is lightly brown.

Filling: Combine eggs, sugar, and lemon juice; beat well. Mix flour and baking powder in a separate bowl and stir into the egg and sugar mixture. Pour this mixture over the baked crust and bake this combination in oven for 25 minutes.

Remove the pan from the oven and allow it to cool. If desired, sift powdered sugar on top of the filling. Cut into bars or squares.
