Fresh Citrus Salad

Ingredients

22 ozs mandarin orange undrained
1 whole large grapefruit, peeled and cut into bite-sized pieces
1 whole small cucumber, unpeeled and thinly sliced
8 whole cherry tomatoes, halved
1/4 cup fat-free Italian salad dressing
2 tbsp chopped fresh parsley
1 whole small red onion thinly sliced
1 tbsp honey
1/4 tsp freshly ground black pepper

Preparation

Drain and reserve the juice from the mandarin oranges. Place the oranges, grapefruit, cucumber, tomatoes, and onion in a large bowl, and toss to mix well. Set aside.

To make the dressing, place the reserved orange juice in a small bowl. Add all of the remaining ingredients, and stir to mix well.

Pour the dressing over the citrus mixture, and toss well. Serve immediately, or cover and chill until ready to serve.
