Fluffy Pancakes

Yield: 8 pancakes

Ingredients

1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 egg
1/4 cup shortening, melted

Directions:

In a bowl, combine flour, sugar, baking powder and salt. In a separate bowl, combine milk, egg and shortening; stir into dry ingredients and mix well. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown.
