Curried Chicken Pita Pockets

Yield: 10 servings

Ingredients

3/4 cup mayonnaise
1 teaspoon soy sauce
1 teaspoon lemon juice
1/2 teaspoon curry powder
1 small onion, finely chopped
9 ounces boneless, skinless chicken breasts, fully cooked
1-1/2 cups green grapes, seedless and halved
3/4 cup celery, chopped
1/2 cup almonds, sliced
10 pita bread, halved

Directions:

In a large bowl, combine mayonnaise, soy sauce, lemon juice, curry powder and onion. Stir in chicken, grapes and celery; refrigerate.

Just before serving, add almonds. Stuff about 1/4 cup into each pita half.
