Cuban Black Beans with Rice

Serve with salad and pineapple chunks for a complete meal

Yield: Serves 4

Ingredients

1 tablespoon olive oil or oil
1/2 cup chopped green bell pepper
1/2 cup chopped onion
1 clove garlic, minced
1 can (15 oz.) black beans, drained, rinsed
1 can (14 1/2 oz.) whole tomatoes, undrained, cut up
1/2 lb. cooked turkey or ham, coarsely chopped
1/2 teaspoon dried oregano leaves
1/8 teaspoon ground red pepper (cayenne)
1 bay leaf
2 cups hot cooked rice

Directions:

Heat oil in large skillet over medium-high heat. Add green pepper, onion and garlic; cook and stir until crisp-tender.

Stir in beans, tomatoes, turkey (or ham), oregano, ground red pepper and bay leaf; simmer 10 minutes. Remove bay leaf. Serve bean mixture over rice.
